The last few months this is my favourite bakery and I really enjoy preparing this banana bread daily, for breakfast, dessert or just as a small bites with my coffee. What I really love is the dough is becoming so fluffy and at the same time the loaf has a really light taste.
I was also using the same ingredients for this dough to prepare a sponge for other desserts and even a cake for my birthday this summer.

- 140g butter (softened)
- 140g caster sugar
- 2 large eggs
- 140g flour
- 1 tsp baking powder
- 2 bananas
- 50g icing sugar
Preheat oven to 180C. Butter the loaf tin and then line the base and sides with baking parchment.
Mix 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour. Then add the remaining flour, 1 tsp baking powder and 2 mashed bananas. Pour the mix into the tin and bake for about 30 mins.
Remove from the oven and once chilled drizzle the icing sugar across the top of the loaf.
