It has been a busy week at work and every day the weekend looks so far from now. I was waiting for the weekend so I can share some more of my favourite recipes with you guys but I couldn’t wait – I want to share a tasty, easy recipe that I’m doing after a thought day at work. Actually doing now while typing this post. It takes no more than 30 min to prepare, cook and of course enjoy it.
How about a ham and mushroom creamy twist of the classic carbonara tagliatelle? Tasty 😋. The perfect solution for a cozy evening after a long week, pairing with a glass of Pinot Grigio and Netflix series.
- 500g tagliatelle
- 250g ham
- 200g mushrooms
- 2 eggs
- 2 tsp olive oil
- fresh thyme
Heat the olive oil in a large frying pan over a medium heat. Add the ham and cook for 2-3 min, then add the chopped mushrooms, thyme leaves and garlic. Cook for 5 more minuets until the mushrooms are ready.
In the meantime cook the pasta in a boiling water as per instructions of the label. While the pasta is cooking mix off the heat the eggs with pinch of salt and the greater cheese and lightly whisk the ingredients.
Throw the pasta with the ham and mushrooms on the top of the carbonara sauce and give it a quick mix before serving. Season to taste with a freshly ground black pepper.
